98% Cabernet Sauvignon, 2% Sangiovese
This wine is an excellent accompaniment to fine dishes and great friends. Our 2008 Cabernet is going to be one for the ages. It is opulent and intense and opens up to more layers and finesse than one would think for a Napa Valley Cabernet. The Sangiovese used causes the aromatic esters to volatize and make apparent. It possesses aromas of black cherries, Belgian dark chocolate and fresh plums. On the palate it has a decidedly black fruit driven entry of cassis and Satsuma plum jam, glove leather and roasted hazelnuts and toast. Dense in color, the aroma and flavor are congruent and complimentary. Cabernet Sauvignon is usually served with hearty dishes of grilled meats, and substantial pasta dishes of Portobello mushroom. It can also be paired w/ dry, Pecorino cheese and dark chocolate decadence. It will age well for over a decade or more.
