Dillon Vineyards | Stainless Steel Fermented Chardonnay
Our chardonnay grapes are crushed directly to press, settled, racked and inoculated with X16 and VL2 yeast. To retain the full varietal character of our fruit, this chardonnay is cold fermented in temperature controlled stainless steel tanks for up to eight months. The wine receives an additional 12 months bottle aging prior to release. Located on the floor of the Napa Valley, the grapes of our Yountville Appellation vineyard have strong hints of pineapple and apple. This fruit is the focus of our wine making. Our 2009 vintage has bold, young floral notes with the bright, balanced acidity of fresh citrus and kiwi. Crisp and clean, this wine generates an appealing mouth feel and a refreshing finish on the palate.
